We may have been through this before. If so, I apologize, but I’m too lazy to search the archives. Speaking of food and cooking, as we often do, how do you get crispy French fries!? Asked the man who last week was talking about putting out a cookbook. Seriously, this is one of the most daunting kitchen challenges I have come upon in a long and admittedly checkered career. I tried again last night, with limited success, but I’m not about to admit to the ridiculous amount of labor and ritual that went into the finished product. I can’t see doing that everytime I want French fries. Now, I’m not talking about the good ol’ greasy steak fry, or home fry, that flops around something like a noodle. Those can be delicious, and they have their place. However, I’m after the crisp, yellow, snappy fry that can be found at any European cafe. Or McDonald’s.
