Things have been kind of quiet around here; it’s time to stir up some more controversy. I know my way around a kitchen fairly well, but one thing that’s always given me trouble is an egg-over-easy. I am forever in awe of the people who stand behind the counter at Waffle Heaven turning out order after order of fluffy, perfect eggs-over-easy (my favorite way to eat a breakfast egg, by the way), all the while displaying that out-of-body demeanor that must be essential in such a job. So, do you have any favorite tips for cooking eggs-over-easy? Better yet, are you a professional griddle cook? Maybe you hate eggs-over-easy and just want to fight. I know you’re out there.
